LAVENDER SCONE'S

BY POPULAR DEMAND, A RECIPE FROM SUSIE FOR THE WONDERFUL LAVENDER SCONES THAT WERE FOR SALE AT HER OPEN GARDEN THIS YEAR


BASIC SCONE RECIPE

4 OZ SR FLOUR
A PINCH OF BAKING POWDER
1 OZ UNSALTED BUTTER
1 EGG BEATEN
1 OZ CASTER SUGAR
7 1/2 OZ LIQUID -FULL FAT MILK OR BUTTER MILK
1 TABLESPOON LAVENDER FLOWERS

METHOD
MIX FLOUR ,BAKING POWDER,BUTTER,CASTER SUGAR AND LAVENDER TO RESEMBLE FINE BREADCRUMBS ,
THEN. ADD EGG AND THE LIQUID TO MIXTURE.  WITH A WOODEN SPOON MIX TO A DOUGH LIKE CONSISTENCY,IF TO DRY ADD A LITTLE MORE LIQUID. MIX RAPIDLY WITH MINIMUM HANDLING ,
PUT DOUGH IN FRIDGE AND LEAVE FOR 1/2 HOUR ,
ROLL OUT ON FLOURED BOARD AND CUT APPROX 12 1 1/4 INCH THICK RINGS,
REST FOR 15 MIN'S BEFORE BAKING,
BAKE FOR 16 MIN'S AT 180.C,
TILL, JUST FIRM AND LIGHTLY BROWN
SERVE WITH CREAM AND JAM,
